Old-fashioned Pastry Flan

Our pastry chefs, based in our factory in the heart of Normandy, worked for several months to develop a recipe for an “old-fashioned” flan, designed for professional caterers. Flans are a staple of French patisserie, and they wanted to recreate a creamy, melt-in-the-mouth recipe, like those our grandmothers used to make in their kitchens, but also like those now being revived by renowned pastry chefs in their Parisian boutiques. Our “grand mère” flan has been created with particularly high-quality ingredients, including 100% French flours, fresh pasteurized whole milk, free-range eggs... and, of course, no artificial colors or flavors. Our pastry chefs wanted to get as far away as possible from the overly yellow, gelatinous and elastic flan often found on the shelves. Our pure butter recipe, rich in eggs and milk, gives our flan an exceptional creaminess and melt-in-the-mouth texture, all made by a small business with French know-how. The terroir and taste of our regions take pride of place, and our pastry chefs are proud of their recipe, a vanilla flan with a taste of yesteryear! Sold in ready-to-bake aluminum molds. Without defrosting, bake the flan in its mold. Forced-air oven: 1h at 175°C, conventional oven 1h30 195°C. Cooling: 2h30 at room temperature, then unmold and refrigerate for 3h at 0/+4°C.
